Zucchini Patties

    Mix the grated zucchini, pepper, cumin, cinnamon, coriander, salt, pepper, and 1/4 cup of breadcrumbs in one bowl.

    Mix the 1/4 cup water and cornstarch in a separate bowl.

    Form the zucchini mixture into small patties (about 1 heaping tablespoon each).

    Dip each pattie into the cornstarch mixture, then into the remaining 1 cup of breadcrumbs.

    Fry in oil about 2 minutes on each side or until browned.

  • 06

    Serve hot along with pudina or tamarind chutney.

  2. Pepper - 1/2 Teaspoon
  3. Cumin - 1/2 Teaspoon
  4. Cinnamon - 1/8 Teaspoon
  5. Coriander - 1/2 Teaspoon
  6. Water - 1/4 Cup
  7. Breadcrumbs - 1 1/4 Cup
  8. Cornstarch - 2 Tablespoon
  9. Salt - To Taste
  10. Pepper - To Taste
  11. Oil - As per use
