Inji curry/puliyinji

Inji curry/puliyinji

    Cut the cleaned ginger and onion in to small pieces.

    Heat oil in a frying pan, and fry the sliced ginger , onion and garlic till it becomes golden brown . Add red chilli powder, turmeric powder and Coriander powder to this mix. And keep aside to cool.

    Grind this mixture when it cools.

    Heat some oil in the pan, splutter mustard in the oil and add curry leaves .

    Squeeze the tamarind in 1.5 cups of water and strain it, pour to the pan.

    Add the grinded mixture to this water and boil.

  • 07

    Add salt, turmeric powder, chilli powder and Coriander powder to the mix

  • 08

    Add jiggery to the mixture and keep boiling till it becomes thick.

  • 09

    Add fenugreek powder and then remove from fire.

Ingredients
  1. Ginger - 100 gm
  2. Tamarind - size of a small lime
  3. Garlic – 1 pod- sliced
  4. Onion- 1 - sliced
  5. Chilly powder - 2 tsp
  6. Coriander powder - 2 tsp
  7. turmeric powder - 1/4 tsp
  8. Jaggery - size of a gooseberry
  9. Mustard - 1 tsp
  10. Curry leaves
  11. Salt to taste
  12. coconut oil
  13. fenugreek (uluva)powder - 1/2 tsp
